Not only does it Look impressive it tastes a treat as well, and will not break the bank making it an ideal entertainer.

Ingredients:
  • FOR THE MUSHROOM
  • 2 tbsp. Butter
  • Half Onion
  • 2 cloves Garlic
  • 1 stalk Green Shallot
  • 1 sprig Fresh Fennel
  • 5 Shiitake Mushroom
  • 5 White Button Mushroom
  • 0.25 tsp. Salt
  • 0.25 tsp. White Pepper
  • 0.25 cup Bread Crumbs
  • ㅤFOR THE PRAWNS
  • 6 Tiger Prawns
  • 0.25 tsp. Salt
  • 0.25 tsp. White Pepper
  • 1 sprig Parsley, minced
  • 2 cloves Garlic, minced
  • 1 tbsp. Crushed Chill
  • Half Lemon
  • 1 tbsp. Olive Oil
  • 2 slices Bass Fillet
  • Spray Oil
  • 1 tsp. Paprika
  • GARNISH
  • 3 Asparagus
  • 4 Basil Leaves

Add the butter to a medium heat pan and throw in the diced onions and garlic sweat down then add both types of mushrooms and the finely sliced fennel stir in the bread crumbs and season.

Marinade the prawns in the oil chilli lemon juice and crushed garlic .

Spoon some mushroom stuffing on to one end of the fillet then roll up, hold secure with a bamboo skewer. Place in the oven for approximately 20 minutes, in the last five minutes sprinkle the top of the fish with paprika and bake further.

On a medium hot griddle sear the marinated prawn both sides, until cooked succulently.

Lay out the rolled fish and the prawns and garnish with greens and fresh lemon.
