  • 17 oz. Milk
  • 1/2 small Onion
  • 1 slice Bay Leaf
  • 1/2 small Dried Red Chili Peppers
  • 1 tsp. Salt
  • 4 oz. Butter
  • 4 oz. Flour
  • 1/4 tsp. Nutmeg
  • 1 lb. Spaghetti
  • 4 oz. Parmigiano Reggiano
  • ㅤFilling
  • 1/4 cup Mozzarella Cheese
  • 1/4 cup Green Peas
  • 1/4 cup Ham, Diced
  • For The Vegetables
  • 2 tbsp. Extra Virgin Olive Oil
  • 3 small Garlic
  • 1 large Red Onion
  • 1/4 tsp. Salt
  • 1/4 tsp. Ground Black Pepper
  • 1 large Red Bell Pepper
  • 1 large Green Bell Pepper
  • 1 large Yellow Bell Pepper
  • 1/4 tsp. Salt
  • 1/4 tsp. Ground Black Pepper
  • 5 oz. Tomato Sauce
  • 1/4 tsp. Oregano
  • ㅤ ㅤ ㅤ ㅤFrying Coating
  • 11 oz. Cold Water
  • 9 oz. Flour
  • 2 Qt Cooking Oil for Fry
  • Assemble
  • 3 tbsp. Mozzarella Cheese
  • 3 tbsp. Ham
  • 4 small Cherry Tomatoes, Split
  • 1/4 cup Arugula Salad
  • ㅤGarnish
  • 6 slices Basil

In a pot big enough to contain more than 1 liter of milk and add onion, bay leaf, dried red chili peppers, and salt on low heat.

In another pan add butter, flour, nutmeg, and stir for 3 to 4 minutes.

Pour in half of the milk and keep stirring with a whisk.

Set aside in the fridge to cool down in a covered container.

Cut the spaghetti roughly into 1-inch pieces.

Put all ingredients in a bowl and mix well.

Make a flat bowl in one hand and stuff with a tsp approximately of green peas and diced ham. Close in a ball shape.

On a tray with parchment paper lay a 3 inches wide ring mold and fill with the pasta mixture pressing down giving a disc-like shape.

Remove the ring mold and continue doing the same with the rest of the pasta.

Put the pasta ring in the freezer for 2 to 3 hours.

Cut the bell peppers and the red onion julienne.

In a pot big enough to fit the bell peppers heat up the oil and add garlic cloves. Add the onion cut julienne in the same pot.

Cook for 5 minutes with the lid on low to medium heat. Add all bell peppers and cook for another 10 minutes with the lid on low to medium heat.

Add all the tomato sauce in the same pot and let cook for at least another 10 minutes with the lid on low to medium heat. Add salt and pepper to taste with a sprinkle of fresh extra virgin olive oil.

In a bowl put the flour and star whisking with one hand while adding gradually the flour. Keep whisking until the batter is smooth.

Heat up the oil in a pot to approximately 160°C / 320°F. Dip the pasta disc into the batter with one hand and letting the excess batter dripping before putting it into the oil. From very close to the oil drop very gently the disc avoiding splashing. Keep doing the same procedure for all the pasta discs.

Lay the fried pasta discs onto paper napkins and let cool down a few minutes before serving.

Lay stir-fried vegetables on the plate and add topping with Mozzarella Cheese, Ham, Cherry Tomatoes, Split, and Arugula Salad.
