Can’t decide on having pasta or fish? Well, this dish gives you the best of both worlds. Penne pasta is cooked in a creamy tomato sauce, gets fresh cod added in to make this a hearty yet light one-pot meal.

Ingredients:
  • 7.4 oz. Onion
  • 2 tbsp. Butter
  • 2 clove Garlic
  • 1 tsp. Thyme
  • 1 tbsp. Tomato Paste
  • 1 cup White Wine
  • 13 oz. Tomato
  • 16 fl oz Heavy Cream
  • 32 fl oz Chicken Stock
  • 1 pinch Salt
  • 1 pinch Black Pepper to Taste
  • 8 oz. Penne Pasta
  • 14.4 oz. Cod Fillet
  • 0.5 count Lemon
  • 0.7 oz. Fresh Basil

Melt butter in a stock pot over medium heat

Chop onions and sauté until soft. Use garlic press to crush the garlic cloves and remove thyme leaves from its stem.

Add garlic and thyme into the pot, then stir in tomato paste and white wine.

Cut tomatoes into medium size wedges, add into the pot and cook for 1-2 minutes until slightly soft.

Stir in heavy cream, chicken stock, penne pasta, season with salt and black pepper to taste. Cover pot with a lid and bring to a simmer, cook over medium-low heat for 7 minutes.

Slice cod fillet into 1-cm thick slices, season with salt to taste and juice of half a lemon.

Add fish slices into the pot, cover pot with the lid and cook for 2 minutes until the fish is firm and opaque. Chop fresh basil and stir it into the pasta, serve right away.
