Oven Roasted Oysters and Fried Oysters

  • 1 Head Garlic Cloves
  • 1 inch cube Ginger, Finely Chopped
  • medium Carrot, Finely Chopped
  • 1 stalk Green Onion

  • 1 tbsp Oyster Sauce
  • 3 large Oyster [Way1]
  • 3 large Oyster [Way2]
  • Flour Seasoning
  • cup Flour
  • ½ tsp Chili Powder
  • ½ tsp Onion Powder
  • ¼ tsp Salt
  • tsp White Pepper
  • ½ tsp Dill Weed
  • 1 large Egg
  • ½ cup Bread Crumbs
  • 3 cups Cooking Oil [Oyster Fring]

Oven Roasted Oysters : Peel and mince the garlic, slice and mince the ginger and carrot, and combine them in a bowl. Finely chop the green onion and transfer to a separate bowl; set aside.

Heat the oil in a small saucepan, then pour it into the garlic, ginger, and carrot mixture. Season with white pepper and oyster sauce and mix well.

Preheat the oven to 180°C/350°F.

Shuck the oysters. Pour a pile of coarse sea salt onto a baking sheet and nestle the oysters on the half shell into the salt. Bake for 5 minutes.

Remove the pan from the oven. Spoon the oil and vegetable mixture on top of the oysters and garnish with chopped green onions. Bake for another 5 minutes. Serve.

Fried Oysters: Shuck the remaining oysters, completely removing the meat from the shells. Transfer the meat to a plate and set aside.

In a medium bowl, combine the flour, chili powder, onion powder, salt, white pepper, and dill weed and mix well. In a second bowl, beat the egg. In a third bowl, add the bread crumbs.

Dip each oyster first into the flour mixture, then into the egg, then into the breadcrumbs.

Heat about 3 inches of oil in a pot. Add the breaded oysters and fry, flipping occasionally, until golden brown on all sides. Drain on a paper towel-lined plate.

Pour a bed of coarse sea salt onto a serving plate. Arrange the baked and fried oysters on top of the salt, and garnish with dill, sliced cherry belle radish, edible flowers, and red sorrel leaves.
