INGREDIENTS:
  • 2 lb. Oxtail
  • 2 qt Chicken broth
  • lb. Daikon
  • 1 large Onion, diced
  • 2 tbsp Shaoxing wine
  • 2 sticks Fresh corn
  • ½ tsp Ground salt
  • 1/8 tsp White pepper
  • 1 tbsp Soaked goji berries

Roast the oxtail at 400°F/200°C for 30 minutes to remove the blood. Thus the soup will not be greasy and taste gamey.

Cut daikon into rough chunks.

Cut the corn ear into 3 segments.

In a large stockpot over high heat, add chicken broth, oxtails, onion, daikon, and Shaoxing cooking wine, bring to a boil. Then cover the lid, turn heat to low, simmer for 90 minutes.

Add corn pieces cook for another 20 minutes, then season with salt and pepper and add Soaked goji berries.
