Pan Fried Lemon Fish Fillet

Lashings of freshly made mango and lemon sauce are so vibrant and special when put with the crumb sea bass fillets. A few inspiring cooking techniques in my video to guarantee you can execute a top-quality dish. simple cooking process.

  • 1 lb. Sea bass

  • ½ tsp Salt
  • 1 tbsp Shaoxing wine
  • ¼ tsp White pepper
  • 1 large Egg
  • 1 tbsp Custard powder
  • [ For Deep-fry ]
  • 2 cups Bread crumbs
  • 2 Qt Cooking oil
  • Lemon Sauce
  • ½ large Fresh shreds mango
  • 1 large Lemon zest
  • 1 large Lemon, juiced
  • 3 tbsp Water
  • tbsp Sugar
  • ½ tsp Salt
  • 2 tbsp Honey
  • 1 tbsp Custard powder

First, slice open the dorsal of the fish from the middle line, then lay the knife parallel to the cutting board and cut from the front until the tail.

Remove the vertebrae and tail, and then trim both belly and dorsal sides. Cut each fish fillets into 3 equal pieces.

Combine the fish with 【Marinade】in a bowl, then mix well.

In a flat tray,  evenly coat the fish fillet pieces with bread flour.

Peel the fresh mango and cut it into thin slices, then cut into 2-inch strips and set aside in a bowl.

Peel the lemon and cut the zest into thin strips then set aside in a bowl.

Mix all 【Lemon Sauce】 into a bowl and mix well.

In a wok over medium heat, add enough cooking oil, deep fry the fish pieces at 140°F-170°F/60°C-80°C for 2-3 minutes,  remove from the oil.

When the oil temperature back up to 140°F-170°F/60°C-80°C, re-fry the for 30-40 seconds until golden. Remove from the oil and drain.

In a cooking pan over low heat, add the【Lemon Sauce】and bing it to a boil then remove from the heat.
