Pan-Seared Tuna Burgers With Lemon Garlic Mayonnaise

Place tuna in a strainer, press with a fork to remove any excess liquid, and put tuna in a bowl.

Dice the water chestnuts and ginger, add to the tuna bowl.

Chop the scallion and small bunch of parsley, then place scallion and half of parsley in the bowl with the other ingredients.

Place remaining half of the parsley in a separate bowl and set aside.

Season with salt and black pepper. Finally, add eggs and blend all ingredients together with your hands.

Next, form tuna into palm-sized balls.

Place tuna balls in a bowl of breadcrumbs to cover thoroughly, and press into patties.

Heat oil in a pan over medium heat. Place tuna patties in the pan, and fry each side for 4 minutes, until they turn a light golden-brown.

Place patties on a plate covered with paper towels to absorb the excess oil.

Place mayonnaise in a bowl and add remaining parsley. Mince garlic and add to bowl, then squeeze ½ lemon in bowl, and stir together with a spoon.

Brush some butter in a pan over medium heat, and place the sandwich buns face down in the pan for a few minutes, until a light golden-brown.
