Ingredients:
  • Philly Cheesesteak Filling
  • 3/4 lb. Thinly shaved beef (ribeye, top sirloin, flank, etc)
  • 1/4 tsp. Black pepper
  • 1 tsp. Salt
  • Spray oil
  • 1 cup Yellow onion, small diced
  • 2 tbsp. Neutral oil
  • 1/4 tsp. Black pepper
  • 3/4 cup Bell pepper, small diced (optional)
  • 1 Sprigs Thyme
  • 1 tbsp. Garlic, minced
  • 1 cup Beef broth
  • Assemble
  • 4 ea. Provolone slices
  • 4 ea. Hoagie rolls
  • For The Panko
  • 1/2 cup Panko
  • 1 tsp. Fresh thyme, minced
  • 1/4 tsp. Salt
  • 1/8 tsp. Black pepper
  • 1 tsp. Olivre oil
  • Salad Dressing
  • 1/4 cup Buttermilk
  • 1/4 cup Mayonaise
  • 1 ea. Lemon juice and squeezed
  • 2 tbsp. Fresh chives, minced
  • 2 tbsp. Frech dill, minced
  • 1/2 tsp. Salt
  • 1/4 tsp. Black pepper
  • Wedge Salad
  • 1 cup Cherry tomatoes, halved or quartered
  • 1 head Iceberg lettuce, quartered
  • 1/3 cup Blue cheese
  • 1/2 cup Cooked bacon

Taking a sharp knife, slice the semi-frozen steak against the grain. Season with 1/2 tsp salt and pepper.

Heat a large saute or cast iron over medium-high heat. Add neutral oil and cook steak in an even layer and in batches if needed. When the steak is well browned, 4-5 min, remove from pan.

Add onions and cook for 2-3 minutes. Add optional peppers and cook for 2 minutes. Add garlic, one minute. Reduce heat to medium, add thyme and beef broth. Simmer until the liquid is almost gone. Add back steak and toss to coat.

Preheat oven to 375°F/200°C.

In a small bowl, toss panko, salt, thyme, and olive oil.

Place on a parchment sheet and bake for 10 minutes, stirring as needed until golden brown. Reserve for final garnish. At the same time toast the hoagie rolls. Set aside.

Whisk【Salad Dressing】in a medium bowl.

Toss tomatoes in dressing.

Plate the wedges and top with tossed tomatoes, blue cheese, cooked bacon, dressing, 【Crispy Bread Crumbs】

Place Provolone slices inside of hoagie rolls, and spoon【Philly Cheesesteak Filling】into hoagie rolls.
