Pan seared potato gnocchi with crispy prosciutto, olive oil, butter and crunchy fresh sage leaves, are but a few of the bold ingredients that complement one another. A simple and quick toss in the pan and this dish speaks volumes with flavour and texture. Ingredients:
  • ㅤ ㅤFor The Gnocchi
  • 0.25 tsp. Salt
  • 1 lb. Gnocchi
  • 1 tsp. Olive Oil
  • ㅤ ㅤ ㅤ ㅤFor The Prosciutto
  • Spray Oil ㅤ ㅤ ㅤ ㅤ
  • 5 slices Prosciutto
  • ㅤ ㅤ ㅤ For The Sage
  • 1 tbsp. Butter
  • 0.5 cup Sage
  • ㅤ ㅤ ㅤ ㅤ For The Mushroom
  • 1 tbsp. Butter
  • 4 medium Mushroom
  • 0.25 tsp. Salt
  • 0.25 tsp. Black Pepper
  • ㅤ ㅤ ㅤ ㅤAssemble
  • 1 tbsp. Butter
  • 2 cloves Garlic
  • 0.5 tsp. Salt
  • 0.25 tsp. Black Pepper
  • 2 tbsp. Grated Parmesan Cheese
  • 1 tbsp. Shaved Parmesan Cheese

Cook the gnocchi in boiling salted water for around 5 minutes, drain and set aside.

Sear the prosciutto slices in a lightly oiled medium hot skillet, put aside. Adding a fresh knob of butter to the skillet gently fry the sage leaves until it turns dark and crispy, this will only take a few seconds (so stay close), set the sage aside. Then add the next knob of butter and fry the mushrooms until light golden, put all three items aside.

Add a knob of butter to the skillet along with the garlic and gnocchi, sear the gnocchi until it takes on a light golden crust in places, season with salt and pepper, throw-in the prosciutto, mushrooms and sage and give it a good toss and finish your dish with a good shaving of fresh parmesan.
