Rustic elegant food, you can make a lot of people happy with a simple dish like this. Plenty of flavors will pop out when you take each bite. Freshness from the lemon zest zucchini the aromatics from the herbs and garlic and the wonderful subtle floral notes that come from the Dijon mustard sauce.

Ingredients:
  • Chicken
  • 1 tbsp. Extra virgin olive oil
  • 6 ea. Chicken drumsticks
  • 1/2 tbsp. Pepper
  • 1/4 tbsp. Sea salt
  • 2 spring Lemon thyme
  • 4 cloves Garlic
  • 2 ea. Shallots
  • 2 tbsp. Butter
  • 2 cup White wine
  • 2 spring Lemon thyme
  • 2 tbsp. Dijon mustard
  • 2 cup Chicken stock
  • 1 bu. Lemon thyme
  • Potato
  • 2 cup Petite potatoes
  • 2 tbsp. Extra virgin olive oil
  • 1/4 tbsp. Sea salt
  • 1/4 tbsp. Pepper
  • 3 cloves Garlic
  • 1 spring Rosemary
  • Zucchini
  • 2 tbsp. Extra virgin olive oil
  • 2 ea. Zucchini
  • 1/4 tsp. Pepper
  • 1/8 tsp. Sea salt
  • Garnish
  • Parsley
  • 1/2 ea. Lemon zest
  • 1/4 ea. Orange zest
Directions:

Take a heavy bottom pan over medium heat, add some olive oil and place the drumsticks sear all over, and season with salt and pepper.

Add the thyme, garlic, shallots to the pan with a knob of butter and cook until they soften. Pour in the white wine and allow to reduce down to approx 1/2 then add the dijon mustard stir until creamy.

Add the chicken stock and lemon thyme to the pan and continue to simmer down until the liquid reduces by half and the sauce looks silky and creamy.

Place the baby potatoes a few sprigs of rosemary and garlic cloves in an oven dish sprinkle with a little oil and salt and pepper and bake at 350°F/180°C for approx 15 minutes or until tender throughout.

Cut the zucchini into thick rounds and saute on both sides until golden and caramelized season with salt and pepper and a scrape fresh orange and lemon zest.
