Quinoa and Sweet Potato Hash With Baked Eggs

INGREDIENTS:
  • Sweet Potato
  • 1 Whole Sweet potato, chopped
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • 1 tbsp Olive oil
  • Mushrooms
  • 1 cup Sliced mushrooms
  • tsp Salt
  • tsp Pepper
  • 1 tsp Olive oil
  • Cook The Quinoa
  • 2 cup Boiling water
  • 1 tsp Salt
  • ½ cup Uncooked quinoa
  • Stir-fry The Quinoa
  • 1 tbsp Olive oil
  • ½ cup Red bell pepper, medium dice
  • ½ cup Green bell pepper, medium dice
  • ¼ tsp Salt
  • tsp Pepper
  • 2 tbsp Garlic cloves
  • 2 sprigs Fresh thyme
  • ½ tsp Paprika
  • 1-2 tbsp Apple cider vinegar
  • 1 cup Reduced sodium stock
  • cup Pepperoncinis, diced
  • 1 tbsp Parsley, minced
  • 6 large Eggs
  • Topping
  • ¼ ea. Shredded cheese, optional
  • tsp Pepper
  • 1 tsp Salt
  • 1 tbsp Parsley, minced

Turn the oven on at 400°F/200°C.

Season sweet potatoes with salt/pepper/olive oil and place on a parchment-lined baking sheet. Bake 15-20 minutes or until cooked through.

Season mushrooms with salt/pepper/olive oil and place on a parchment-lined baking sheet. Bake 8-12 minutes or until golden brown and cooked through.

Boil lightly salted water. Add quinoa and cook per package instructions. Strain and allow to dry in strainer once cooked.

Heat a large cast-iron pan over medium-high heat. Add oil and cook bell peppers for 4 minutes, or until lightly browned and softened.

Add garlic and thyme cook for one minute. Add paprika and vinegar and stock. Reduce heat to medium, and reduce the stock until almost dry. Add Quinoa and Mix well and add roasted vegetables and pepperoncini. season with salt, pepper.

Poke six holes over the top of the bake and crack the eggs into the holes.

Sprinkle【Topping】over the eggs. Bake for 20 minutes or until eggs is set. Add parsley to garnish and enjoy.
