Roast Salmon and Broccolini With Spicy Caper Vinaigrette

Roast salmon and crispy broccoli both cooked in perfect sync to serve together harmoniously. succulent salmon and crispy caramelized broccoli merged together with the spicy vinaigrette caper sauce, it's a wonderful color and a superb baking dish.

INGREDIENTS:
  • Broccolini
  • 1 bu. Broccolini
  • 2 tbsp olive oil, divided
  • ½ tbsp Kosher salt
  • ¼ Tsp Freshly ground pepper
  • Chili Vinaigrette
  • ½ Jalapeño, thinly sliced Into rings, seeds removed If desired
  • 2 Garlic gloves, ,minced
  • 1 tbsp Drained capers
  • 1 tbsp Unseasoned rice vinegar
  • ¼ tsp Salt
  • For Salmon
  • 6 oz. Skinless salmon fillets
  • ¼ tsp Pepper
  • ¼ tsp Salt

Preheat oven to 400°F/200°C.

Toss broccoli and oil on a large rimmed baking sheet; season with salt and pepper.

Roast, tossing occasionally until browned and crisp-tender, 12–15 minutes.

Meanwhile, combine【Chili Vinaigrette】in a small bowl and let sit for about 10 minutes.

Rub salmon with oil; season with salt and pepper.

Remove broccoli from the oven and push broccoli to the edges of the baking sheet and place salmon in the center. Roast until salmon is opaque throughout, 10–15 minutes.
