This mediterranean Muhammara sauce has been modified to fit in with the keto and paleo diet, as easy as removing the breadcrumbs and adding extra walnuts. Keto Meal: Roasted Red Pepper Muhammara Sauce

- 1½ cup Walnuts, toasted and ground
- 3 medium Red peppers, charred and peeled.
- 1 large Jalapeno- optional
- 2 tbsp Tahini paste
- 1 tbsp Balsamic reduction
- ½ tsp Monk fruit sugar
- ½ tsp Paprika ground
- ¼ tsp Black pepper
- 1 tsp Salt
- ½ cup Parsley
- 1-2 tbsp Olive oil
- 1 large Lemon zest and juice
Toast the walnuts in a medium heat oven approx 4-6 minutes
Roast the bell peppers over an open gas flame rotating them until the outer skin is all blackened. Alternatively, you can roast in a very hot oven to attempt the same effect. Transfer them to a bowl cover with plastic wrap, set aside to allow the peppers to sweat, this process makes the charred skin peel off easily.
Muhammara sauce: blend the toasted walnuts. then add the charred peppers, Jalapeno, tahini paste, balsamic reduction, monk fruit sugar, paprika, cracked pepper, and salt. pulse together until everything is combined add the parsley and a drizzle of oil, lemon juice and more salt if needed.
