A three-dimensional gourmet delight. The tender fennel is an attractive accompaniment to the pan-roasted salmon, with this cherry tomato vinaigrette you get another dimension of delectable flavors. A classy vibrant dish will that will not have you slaving away in the kitchen too long either.

Ingredients:
  • Tomatoe dish
  • 3 tbsp. Extra virgin olive oil, divided
  • 3 cloves Garlic, minced
  • 1 medium Shallot, thinly sliced
  • 34 fresh Thyme leaves
  • 34 sprigs Fresh basil
  • 45 sprigs Fresh parsley
  • 1 pint Grape or cherry tomatoes, cut in half
  • 2 tbsp. Red wine vinegar
  • 2 tbsp. Capers rinsed and drained
  • Orange Fennel
  • 2 tbsp. Extra virgin olive oil, divided
  • 2 cloves Garlic, chopped
  • 1/2 cup Leeks, finely sliced
  • 1 large Fennel bulb, trimmed cut into ¼ wedges
  • 1/2 cup Chicken stock
  • 1/2 cup Fresh orange juice
  • 1/4 large Orange
  • Pepper to taste
  • Salt to taste
  • Salmon
  • 11/2 lb. Salmon fillet, skin on, cut into 2 pieces
  • 1 tbsp. Olive oil
  • 1/2 head Cauliflower florets
  • 2 sprigs Lemon thyme
  • Salt to taste
  • Pepper to taste

Set the oven 350°F/ 180°C.

Cherry tomatoes dish: In a medium heat pot add 1 tbsp of olive oil, the shallot and garlic saute until soft and translucent, add the herbs then add 2 tbsp olive oil, then the cherry tomatoes, capers, and salt n pepper, add the red wine vinegar and simmer gently until the tomatoes are soft.

Orange Fennel: in a medium heat pot add the 1 tbsp olive oil, leeks and garlic. Place the fennel wedges in the pot add another 1 tbsp olive oil and sear for 2-3 mins, then add the stock and the orange juice and segments. Place the lid and allow everything to braise gently for approx 10-15 minutes.

Salmon: In a medium to hot skillet add some oil, the cauliflower florets cook for 1-2 mins. Place the salmon face down and cook for a few minutes or until the Salmon reaches a light golden color Turn salmon over and cook the skin side for a further 2- 3 minutes. Place the pan in the oven to bake for a further 7 mins.
