Salmon Stuffed Avocados

Avocados have been popular for a while but here is a new way to eat them - stuffed! It's very simple. We first make our filling with canned salmon and herbs to flavor. After spooning the mix into the halved avocados, all you need to do is add a garnish or sprinkle of pepper. These are small and quick; perfect for a party appetizer.

INGREDIENTS:
  • 3 oz. Canned salmon
  • tbsp Parsley
  • ½ tbsp Dill
  • 1 tbsp Garlic
  • 1 tbsp Green Onion
  • 2 tsp Apple cider vinegar
  • 2 tsp Olive oil
  • 2 tbsp Mayonnaise
  • 1 tbsp Lemon juice
  • Ground salt
  • 2 large Avocado
  • a pinch Cayenne pepper powder

In a large bowl, add the canned salmon, parsley, dill, garlic, green onion, vinegar, olive oil, mayo, lemon juice and salt then mix it well, set aside.

Slice open avocados and remove the pits, then fill each avocado with the stuffed.

Garnish with some cayenne pepper powder and chopped parsley, serve.
