- 14 ㅤ Tiger prawns

- 1½ Qt Cooking oil
- 1 tbsp Corn starch
- 【Sautéed Deep Fried Prawns】 ㅤ ㅤ
- 1 tbsp Cooking oil
- 1 tbsp Ginger, minced
- 1½ tbsp Green onion, chopped
- 2 tbsp Shaoxing wine
- 3 tbsp Soy sauce
- 2 tbsp Sugar
- 1 tsp Maggi seasoning
- ½ tsp Sweet black rice vinegar
- 1 tsp Sesame Oil
- ⅛ tsp White Pepper
Cut along the outer edge of the shrimp's back, about 1/4-inch deep, remove and discard the vein.
Mince ginger, finely chop the green onion.
Coat shrimps with cornstarch evenly. The cornstarch will absorb some of the moisture to keep the shrimp tender during deep frying.
Heat enough oil to 400°F/200°C, quickly deep fry the shrimps for 1 minute
Remove from oil, drain on a paper towel.
In a cooking pan over medium heat, add a couple of tablespoon oil, ginger, and green onion, fry for about 15-20 seconds until fragrant.
Then add Shaoxing cooking wine, soy sauce, sugar, Maggi Seasoning, and sweet black rice vinegar, stir to mix well.
Add fried shrimps, sesame, and ground white pepper, quickly stir to mix thoroughly.
