This is an easy dish to make, whether it is for an elegant appetizer or a light lunch. With fresh shellfish on top of a creamy spinach sauce, it is not only delicious, but also healthy.

Ingredients:
  • For The Spinach
  • 0.25 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 3 oz. Spinach
  • For The Sauce
  • 1 cup Chicken Broth
  • 1 tbsp. Butter
  • 1 tbsp. Ginger, Sliced
  • 1/4 tsp. Sugar
  • 1/4 tsp. Salt
  • 1/4 tsp. White Pepper
  • 2 tbsp. Cornstarch Slurry (1 to 2 Ratio of Cornstarch to Water)
  • For The Scallops
  • 2 tbsp. Cooking Oil
  • 2 tbsp. Garlic, Sliced
  • 6 large Scallops
  • Garnish
  • 1 tsp. Ground Ham

In a boiling pot of water, add baking soda, and salt. Soak the spinach in the water breifly and take out immediately.

Put spinach in ice water to cool it.

Squeeze the excess water out of the spinach into a blender and add chicken broth to make spinach juice.

Pour the spinach juice into a pot and put butter, ginger slices, sugar, salt, white pepper, water and potato flour to thicken the liquid. Stir on high heat to combine the mixture.

Drizzle oil in a clean frying pan. Add garlic slices and Scallops. Fry until both are golden brown.

Pour the spinach sauce into a dish. Place the fried fresh shellfish on the sauce. Garnish with garlic slices and minced ham.
