Cooked whole eggs swaddled in seasoned meat, then breaded and fried to golden perfection, these Scotch Eggs are the perfect appetizer, picnic food or portable snack!

Ingredients:
  • For the Meatball
  • 4 Eggs
  • 1 lb. Ground Meat
  • 0.25 cup White Vinegar
  • 0.5 cup Parsley
  • 0.3 cup Shallot
  • 1 tbsp. Yellow Mustard
  • 1 tbsp. Ketchup
  • 1 Egg Yolk
  • 1 cup Breadcrumbs
  • 4 cup Cooking Oil
  • 1 pinch Salt
  • 1 pinch Pepper to Taste
  • For the Salad
  • 0.3 cup Dill
  • 0.25 cup Scallion
  • 1 cup Cucumber
  • 1 tbsp. White Vinegar
  • 1 tbsp. Olive Oil
  • 1 pinch Salt, to Taste
  • 1 pinch Black Pepper, to Taste

Add some white vinegar in a pot with boiling water. (Tip: It helps the egg white to be coagulated.)

Make a small hole on the wider side of each egg. Put the eggs into the pot with boiling water. Cook for 5 minutes.

Remove the eggs from the pot. Put the eggs in ice water. Peel the eggshell. Set aside.

In a large bowl, add ground meat, minced parsley and minced shallot. Squeeze some yellow mustard and ketchup. Place an egg yolk on top. Seasoning with salt and pepper. Pour in some breadcrumbs. Mix well.

Roll the meatballs that filled in eggs.

Warm up a pot on high heat with oil temperature of 350°F/175°C. Put meatballs in the pot. Fry about 5-7 minutes until golden brown and cook through.

Meanwhile, in a large bowl, add in shred cucumber, minced dill and minced scallion. Seasoning with salt and pepper. Whisk in olive oil and white vinegar. Mix well. Transfer to a serving plate.

On the serving plate, place the fried meatballs. Enjoy!
