Seafood Pasta in Olive Tomato Sauce

- 1 cup Flour
- 1 pinch Salt
- ⅔ cup Water
- 2 tbsp Olive Oil
- 【 For the Sauce 】
- 4 cloves Garlic
- ¼ cup Green Olives
- 1 medium Tomato
- 1 tbsp Olive Oil
- 1 tsp Red Pepper Flakes
- ½ cup Tomato Sauce
- ½ cup Chicken Stock
- to taste Salt
- to taste Ground Black Pepper
- 11 oz Cod Fillets
- 4 Jumbo Shrimp
- ½ cup Parsley [For Garnish]
Mince the garlic, slice the green olives and cube the tomato, and place each of them in a separate bowl.
Pour the flour onto a clean work surface and add a little salt.
Form a well in the center of the flour and gradually add water, mixing it into the flour with your fingers each time, until a dough is formed.
Knead the dough, roll it into a log shape, and cut it in half.
Place the dough on a plate, drizzle with olive oil, and cover the plate in plastic wrap.
Allow resting for at least 2 hours.
Heat olive oil in a pan over medium heat. Add garlic, red pepper flakes, tomatoes, and tomato sauce, and stir-fry the ingredients together.
Next, add the chicken stock, salt, and black pepper to taste, and cook for 6-8 minutes.
Place cod and shell-on shrimp into the pan, cover, and cook for another 3-5 minutes.
Place the dough on a clean work surface, flatten it slightly using the palms of your hands, and stretch it into a long strip.
Cut the dough into 3-inch pieces, place into a pot of boiling water, cover, and cook for 3 minutes. Pasta noodles should float to the top when done.
Using a spider strainer, remove the noodles from the pot of water and place them into the pan with the shrimp and cod. Mix gently together.
Add chopped parsley, and blend into the sauce.
Plate, serve, and enjoy!
