A ‘Hot pot’ is said to be a social meal and this fish pot is certainly brimming with the fresh catch of the day. Plenty of aromatics incorporated throughout the dish creates a heart warming stew, that allows the seafood to shine. Serve alongside some crusty bread to soak up all those lovely juices not leaving any goodness to waste. A perfect way to enjoy a seafood pot with family and friends.

Ingredients:
  • 2 tbsp. Olive Oil
  • Half Onion, diced
  • 2 Garlic cloves, minced
  • 1 tsp. Crushed Chili
  • 2 Bay Leaves
  • 2 Tomato, diced
  • 2 Parsley, minced
  • 2 Sprigs of Cilantro
  • 1 tbsp. Capers
  • 2 Llarge Scallops
  • 7 Tiger Prawns
  • 6 Mussels
  • 2 Fillets Barramundi, sliced
  • 10 Clam
  • 10 Squid Rings
  • 1 tsp. Salt
  • 0.5 tsp. Black Pepper
  • 2 cup Chicken Broth
  • 6 Basil leaves
  • 1 loaf of Bread

Heat oil in a pan and gently fry onions until translucent, add the garlic, chili, bay leaves and tomato, cook gently for a few minutes then toss in parsley, cilantro and capers.

Add all the seafood followed by chicken broth and basil.

Simmer gently for 2 - 3 minutes then check for seasoning and remove from heat.

Toast two slices of your favourite bread on a hot griddle

Serve bread with the seafood hot pot.
