This seared salmon can be a special occasion dish if you like. The first impression will excite your guests for sure. The tastes are equally impressive crunchy vegetables enhanced during the roasting process. You get balance with enough caramelization but not losing any vibrancy. The salmon stunningly sits atop the lusciously yellow saffron coulis. The pungent garlic flavors are simply a match for the seared salmon steak. It’s a guest pleaser!

Ingredients:
  • Roasted Vegetables
  • 2 ea. Rainbow cauliflower
  • 1 bu. Broccolini
  • 6 head Multicolor radish
  • 6 head Parsnip
  • 1/2 cup Extra virgin olive oil
  • 1 tsp. Kosher salt
  • 1 tsp. Pepper
  • Saffron Garlic Coulis
  • 4 cup Heavy cream
  • 15 gloves Garlic, minced
  • 1 tbsp. Spanish saffron
  • Salmon
  • 3 filets Salmon
  • Pepper
  • Salt
  • 1 tbsp. Extra virgin olive oil

Preheat the oven to 450°F / 230°C.

Roasted Vegetables: Place the cauliflower florets in an ovenproof dish the radishes in a dish and the parsnips season with oil and salt and pepper. Bake the cauliflower for approx 25 - 35 minutes. Do the same process for the radishes and the parsnips bake for approx 20-25 minutes and a little less time needed for the broccolini. your vegetables will be a little crunchy.

Saffron Sauce step 1: In a small pot add the cream and heat, add the garlic, saffron and season a little. Gently heating allowing the ingredients to infuse, the saffron is melting and the garlic is softening and blending in slowly. cook very gently for approx 15 minutes, turn off the heat, and allow to sit.

In a nonstick skillet medium to hot add a little oil and sear the salmon steaks skin down until golden and crispy. Turn the salmon over and cook for a further 2 minutes until lightly colored. let it rest a little.

Saffron Sauce step 2: when the saffron has all melted into the sauce it's time to blend the sauce. Whisk together until you reach a smooth and silky texture, this will enhance the flavors even further.

Plate your dish starting with a lovely pool of saffron garlic sauce, arrange the roasted vegetables onto the sauce nicely allowing the center stage for the salmon steaks Enjoy.
