The combination of the flavours infused in the gnocchi accompany the scallops nicely making this a versatile entree that will wow your family or guests.

Ingredients:
  • 15 premade Gnocchi (fresh, not dried)
  • 2 tbsp. Olive Oil
  • 2 cloves Garlic, minced
  • 1/4 cup Tomato Sauce
  • 1/4 cup Semi sun-dried Tomatoes
  • 1 piece Basil, minced
  • 1/2 tsp. Salt
  • 3 counts Scallop Large
  • 1 tsp. Parsley, minced
  • 1 tbsp. Butter

Add the gnocchi to the boiling water and boil for 3 minutes then refresh in cold water.

Gently heat 1 tbsp of oil, add the finely chopped garlic gently fry a little then stir and add in the tomato sauce, followed by the sun-dried tomatoes, chopped basil, and salt.

Toss the gnocchi into the simmering sauce to absorb all the flavours.

Heat up a flat non-stick pan, add ¼ tbsp oil and season the scallops then add to the hot pan-searing both sides until there is a slightly caramelized look, this usually only takes a few minutes.

Layout the scallops on your serving dish along with the sundried tomato and basil gnocchi paying attention to the presentation.

For some added finesse: you can garnish the dish with your favorite micro herbs.
