Shanxi Hand Pinched Noodles Stir Fry

Skip takeout and make a delicious noodle stir fry at home. Chewy hand-stretched noodles stir fried with shredded chicken, bell peppers, and leafy greens. Yum!

  • 7 oz Chicken breast
  • 2 stalks Green Onion
  • 3 pieces Sliced Ginger
  • 1 tsp Salt
  • 1 tbsp Shaoxing wine
  • 2 cups All Purpose flour
  • 0.5 tsp Salt [making dough]
  • 0.5 cup Water [making dough]
  • 4 cups Water [soak dough]

  • 1 tbsp Garlic Slices
  • 3 oz Onion, chopped
  • 2 oz Carrot Slices
  • 3 oz Green & Red bell Pepper Slices
  • 2 oz Chinese broccoli
  • 1 tbsp Shaoxing wine [Seasoning]
  • 2 oz Chopped Green Onion [Seasoning]
  • 1 tbsp Oyster sauce [Seasoning]
  • 1 tsp Chili powder [Seasoning]
  • 0.5 tbsp Soy sauce [Seasoning]
  • 1 tbsp Fried shallot [Seasoning]
  • 0.5 tbsp Dried Cumin [Seasoning]
  • 0.5 tbsp Chef Made Peppercorn Oil (See ''Chef John Signature Oil'' Video) [Seasoning]

In a pot of water, add sliced ginger, green onion, salt, and a piece of chicken breast. Cook for 15 minutes. Take the chicken breast out and let it cool down. Shred the chicken breast meat by hands and set aside for later use.

On a working surface, mix the flour with salt and water to form a dough. Knead until well blended and smooth. Cover the dough with plastic wrap and let it sit for 10 minutes.

In a medium-size bowl of cold water, add salt and mix evenly.

Kneading the dough to a long strip and cut it into 2 pieces. For each piece, kneading it to a long strip. Then cut the strip into small chunks. Soak these small dough chunks in the bowl of water for 10 minutes to make it softer.

For each small dough chunk, pinch both ends with two thumbs to make it a thin slice of noodles. Drop each slice of noodles into a pot of boiling water.

Get the boiled noodles out of the pot and drain it for use.

In the wok, add the following ingredients in turn and stir fry: garlic slices, onion slices, carrot slices, green pepper slices, cooking wine, and chef made peppercorn oil.

Continue to add drained noodles, green onion segments, chicken, oyster sauce, chili pepper powder, and soy sauce. Stir fry a little while, mix the ingredients evenly, then add fried shallots, cumin granules, Chinese broccoli, and a little water. Continue to stir fry a few times and done.
