Short Rib Tagine

This recipe will show you how to make a delicious short rib tagine. The blending of different flavors from the seasoning and the inherent taste of the meat will leave you wanting more.

INGREDIENTS:
  • 2-3 lbs Short ribs
  • Marinade
  • 3 tbsp Extra virgin olive oil
  • 2 tsp Black pepper
  • 2 tsp Salt
  • Short Rib Tagine
  • 1 tbsp Extra virgin olive oil
  • 2 tbsp Brown onions, deiced
  • 2 tbsp Minced garlic
  • 3 tbsp Extra virgin olive oil
  • 3 large Deiced apples
  • [ Seasoning ]
  • 1 ea. Cinnamon stick
  • 4 ea. Thyme
  • 2 ea. Bay leaves
  • 3 ea. Whole cloves
  • 1 tsp Saffron in 2tbsp chicken stock
  • 1 Cup Red wine
  • 2 cups Beef stock
  • 3 cups Chicken stock
  • 1 tbsp Sherry vinegar
  • 2 tsp Salt
  • [ Seasoning 2 ]
  • 2 tbsp Sherry vinegar
  • 2 tbsp Almonds toasted crushed
  • 2 tbsp Chopped parsley
  • 5 ea. Prunes halved
  • For the Cous Cous
  • 10 oz. Chicken stock
  • ¼ tsp Salt
  • 4 Sprigs Thyme
  • 1 cup Cous Cous

Season short ribs well with【Marinade】and sear in a pot evenly browning meat.

In a small pot add chicken stock, salt, thyme, and bring it to boil.

Add boiled chicken stock to Cous Cous and cover for 10 minutes.

Remove short ribs and sweat onions garlic and apples with 3 Tablespoons of olive oil in the same pot without cleaning.

Add [Seasoning] and add the short ribs back to the pot.

Covered for 2.5 hours or until tender and pulls apart easily.
