With a succulently seared lemony garlic shrimp, this is amazing-looking finger food that’s ideal for that special cocktail party in two delectable bites and no mess.

Ingredients:
  • Bechamel sauce
  • 3 tbsp. Butter
  • 1 cup Flour
  • 1 ea. Brown onion, diced
  • cup Milk
  • 1 tsp. Nutmeg, grated
  • 2 tsp. Thyme, chopped
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • Crispy Coating
  • 2 cup Bread crumbs
  • 3 large Eggs, beaten
  • 1 large Lemon zest
  • 1 tbsp. Parsley, chopped
  • Shrimp
  • 1 tbsp. Olive oil
  • 1 tsp. Garlic, minced
  • 6 oz. Shrimp
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1/2 tbsp. Butter
  • 1 large Lemon zest
  • 1 tbsp. Parsley, chopped
  • 1/2 large Lemon juice
  • Assemble
  • 6 slices Serrano ham

Bechamel sauce: In a medium heat pan melt the butter and saute the onion until translucent. Add the flour cook for a 1 minute season then gradually add the milk cooking for a few minutes. Followed by the nutmeg and thyme, season with salt and pepper and allow the sauce to cool and set semi-solid. (Note: you can make the day before.)

Croquettes: In three separate bowls place: Flour, eggwash, and breadcrumb (add the zest and chopped parsley to the crumbs) roll the bechamel into 1 inch sized balls do the flour eggwash and crumbing to each ball.

Deep Fry the balls in 350°F/180°C hot oil yielding a deep golden crispy coating lay on kitchen paper.

Shrimps: Heat a medium skillet with a little oil saute the garlic gently. Add the shrimps, butter. Cook the shrimps for 2-3 minutes on either side they finish with a squeeze of lemon and a scattering of parsley.

Skewers: Place each shrimp on top of the croquet followed by a ribbon of sliced serrano ham. serve.
