Tofu is a wonderful source of protein that is low in fat. This recipe will show you an easy way to incorporate nutritious tofu into a delicious dish with ham, egg and chicken broth.

Ingredients:
  • 1 pack Soft Tofu
  • 2 oz. Finely Diced Ham
  • 2 tbsp. Cilantro
  • 5 Large Egg White
  • 0.25 cup Cornstarch Mixture
  • 1 cup Chicken Broth
  • 0.25 tsp. Sugar
  • 0.25 tsp. Salt
  • 0.25 tsp. White Pepper
  • 2 tbsp. Slurry( 1 Tbsp of Cornstarch and 2 Tbsp of Water. )

Cut soft tofu into small cubes and then soak them in water.

Finely dice the ham

Chop the cilantro.

Take the tofu out of the water.

Add diced ham, chopped cilantro, egg white, and cornstarch mixture. Mix well, gently.

Add cooking oil in a wok and heat until the temperature is up to 140°F-170°F / 60°C-80°C. Add the prepared tofu in the Step 5 in the wok and gently stir for less than 2 mins. Then take the tofu out while filtering out the cooking oil

Add chicken broth in an empty wok, then add the tofu from Step 5, sugar, salt, white pepper powder and slurry (a mixture of water and potato startch).

Key point: You need to use an appropriate amount of egg white and cornstarch mixture. You also need to control the cooking oil temperature within 140°F-170°F / 60°C-80°C. If the temp is too high, the tofu will puff too much and stick together. In Step 5, remember to gently stir to avoid having the tofu stick together. This way, tofu will keep its pearl size, individually. Step 5 is also important. Try to filter out as much cooking oil as you can. Otherwise, it will taste oily.
