Asian slaw-style salad with seared salmon steak cooked to your liking. The glazed Salmon is marinated in a blend of citrus honey soy and sesame, and these flavors are united harmoniously throughout the siam slaw. with some delicious and crunchy fresh textures throughout. The fresh orange segments and toasted peanuts bring color flavor and texture to the end dish.

Ingredients:
  • 2 filets Salmon (6 oz)
  • 1 tbsp. Olive oil
  • Marinade
  • 1 tbsp. Garlic, minced
  • 1 tsp. Sesame oil
  • 1/2 large Lemon, zest and juice
  • 2 tsp. Honey
  • 1/4 cup Soy sauce
  • Salad
  • 3/4 ea. Cabbage, shredded
  • 1/2 ea. Purple cabbage, shredded
  • 1/4 cup Cilantro, picked leaves
  • 1/4 cup Mint, picked leaves
  • 1/4 cup Basil, picked leaves
  • Dressing
  • 1/2 ea. Limes juice
  • 1 tbsp. Honey
  • 12 tsp. Sambal chili paste
  • 1 tbsp. Fish sauce
  • 2 ea. Limes zest
  • 1/4 tsp. Salt
  • 1/4 tsp. Pepper
  • Garnish
  • 1/4 cup Roasted peanuts
  • 1/4 cup Crispy onion straws
  • 1/4 cup Oranges, segmented or canned mandarins julienne
  • Cilantro
  • Basil
  • Mint

Mix all the salmon marinade in a Quart-sized sealable bag. Add the salmon and marinate for 30 min-1 hour.

Remove from marinade and wipe off excess marinade, allow to dry skin-side down on a paper towel.

Heat a medium nonstick over medium heat, add olive oil and wait until small wisps of smoke form. Lay the salmon filet, skin-side down on the skillet. Reduce heat to medium-low and cook until the fish becomes opaque halfway up the filet. Flip and allow to cook for 1 minute then remove from heat. Allow cooling to room temp before adding to salad.

Whisk lime juice and honey together until dissolved. Whisk in remaining ingredients and set aside until ready for use.

Mix cabbage, herbs, and orange in a medium bowl. Season with salt and salad dressing. Place on a plate with the salmon and garnish with remaining ingredients.
