Combine sweet chilli, orange with a subtle dash of tabasco and you will create a sticky tangy sauce with a slight punch of spice. This one pot dish kicks off with butterfly shrimp that are cooked to tender and juicy perfection thus taking on all the other ingredients as they thicken. Each ingredient is a joy to the mouth and yes it is simple to make at home.

Ingredients:
  • ㅤFor The Rice
  • 2 tbsp. Olive Oil
  • 2 tbsp. Diced Onion
  • 1 cup Long Grain Rice
  • 2 cup Chicken Broth
  • 2 tbsp. Soaked Saffron (Steep in a ¼ cup of the hot broth. Set aside.)
  • 0.5 tsp. Salt
  • 2 tbsp. Tomato, Diced ㅤ ㅤ ㅤ ㅤ ㅤ
  • For The Shrimp
  • 1 tbsp. Olive Oil
  • 1 Garlic Clove, minced
  • 8 Jumbo Shrimp ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ
  • 0.25 tsp. Salt
  • 2 tbsp. Fresh Orange Juice
  • 2 tbsp. Sweet Chili Sauce
  • 1 tbsp. Tabasco Sauce
  • 1 tsp. Fresh Orange Zest

Place olive oil in a pan of medium heat. Add onions and garlic, cook until translucent. Add rice, steeped saffron and chicken broth, simmer gently for approx 8 minutes until the liquid is completely absorbed. Slide the pot off the heat, add the lid to allow the rice to steam for approximately 3 - 5 minutes.

In a medium skillet over a medium heat, heat the olive oil up. Add the minced garlic and put in the shrimps and sear gently. Add orange juice, sweet chilli, tabasco and salt, gently stir fry until the prawns are pink and the sauce is thick and sticky.

Finish with a pinch of orange zest for that extra zing.

Use a fork to check if the rice is fluffy and serve together with the prawns.
