The wild and wonderful sauce of truffles, morel and shiitake mushrooms compliments the hardy beefy taste of a New York Strip steak. Pairing a wine calls for the equally earthy, pinot Noir.

Ingredients:
  • 1 tbsp. Wild Black Truffles, Dried
  • 1/4 cup Morel Mushrooms, Dried
  • 2 medium Shittake Mushrooms, Dried
  • For the Steak
  • 0.8 lb. New York Strip Steak
  • 1 tbsp. Olive Oil
  • 1/2 tsp. Sea Salt
  • 1/4 tsp. Ground Black Pepper
  • 3 tbsp. Butter
  • 2 cloves Garlic
  • 1 count Shallot
  • 1 stalk Scallion
  • 2 sprigs Fresh Rosemary
  • For The Sauce
  • 2 tbsp. Butter
  • Few pieces Beef Bites
  • 1 tbsp. Shallot
  • 1 tbsp. Oyster Sauce
  • 1/2 cup Red Wine
  • 1 tbsp. 1 tbsp Wild Black Truffles, Soaked
  • 1/4 cup cup Morel Mushrooms, Soaked
  • 2 medium Shittake Mushrooms, Soaked
  • 1 cup Beef Stock
  • 1/4 tsp. Ground Black Pepper

Place black truffles, morel mushrooms, and shiitake mushrooms in 3 separate small bowls filled with water, and soak for 30 minutes.

Preheat the oven to 400°F / 200°C. Trim off 2 tablespoons of meat from the steak for beef bits to use later.

Heat medium skillet. Add olive oil, 1/2 teaspoon of sea salt and 1/4 teaspoon of black pepper to each side of the steak.

Cut one shallot in half, and smash with side of knife 2 small garlic cloves.

Add the steak to the skillet, after 5 minutes flip the steak, then add 3 tablespoons of butter, smashed garlic, shallot halves, whole scallion, and rosemary.

After another 5 minutes of cooking, transfer the skillet with the steak to the oven. Bake for 5 minutes.

When baking finished, remove from oven. Transfer the steak and fried seasonings to a baking sheet with a rack. Place the seasonings onto the top of the steak, and spoon any drippings onto the steak. Let it rest for 5 minutes.

Heat a small saucepan, add beef bites and 2 tablespoons of butter, sauté until butter melts.

Add about a 1/4 of a shallot, oyster sauce and red wine, and flambé. Once flames are out, add shiitake and morel mushrooms, and beef stock, bring to simmer. Place lid over pan and cook for 10 minutes.

Then add black truffle, 1/4 teaspoon of black pepper, cook until reduced and thickened. Strain the sauce into a bowl, set aside.

To serve, slice the steak and add to a plate, arrange the mushrooms and truffles, serve the sauce drizzled over the sliced steak.
