Savory and sweet, Steamed Ribs with Rice Powder is another classic Sichuan dish. The rice powder provides a fresh and faint rice fragrance, which matches great with the chewy and juice taste of pork ribs. If you do not eat pork, you can choose beef.

Ingredients:
  • 2 lb. Pork Back Ribs
  • 1 tbsp. Shaoxing Wine [Marinade]
  • 0.5 tsp. Salt [Marinade]
  • 0.25 tsp. Sugar [Marinade]
  • 1 tbsp. Soy Sauce [Marinade]
  • 0.25 tsp. Five-Spice Powder [Marinade]
  • 1.5 tbsp. Pixian Soybean Paste  [Marinade]
  • 7 oz. Rice
  • 1 tbsp. Peppercorn
  • 1 count Star Anise
  • 5 pieces Bay Leaf
  • 2 sticks Cinnamon
  • 1 piece Dry Lotus Leaf (Soaked in Water For A Few Hours) Or One Fresh Lotus Leaf (Boiled For A Minute)

Cut ribs between bones in long slice.

In a large bowl, combine the ribs with Shaoxing wine, soy sauce, Pixian bean paste, five-spice, salt, and sugar.

Mix all the ingredients well and marinate for 2 hours.

In a clean, dry wok over medium-low heat, add 7 oz (200g) rice, peppercorns, bay leaves, star anise, and cinnamon stick. Constantly stir for about 5 minutes until rice turns golden brown. Turn off the heat, and let the mixture cool slightly.

Transfer the rice mixture to a grinder or food processor and discard peppercorns, bay leaves, star anise, and cinnamon stick. Mill the rice mixture into a coarse grind.

Line a steamer basket with a lotus leaf. Coat the ribs evenly with granulated rice and place them on the lotus leaf.

Steam for 45 min to 1 hour. You can use bamboo steamer or electric rice cooker at home for steaming.

The spiced rice powder here is the real star, it lends the pork belly awesome flavor and texture. You can buy ready-made rice powder from Chinese grocery stores, or simply make it at home as step 4 shown. It’s also a great idea to double or triple the rice mixture, and store the leftovers in the refrigerator. The rice mixture can last a few months in the fridge.
