Ingredients:
  • 2 medium Fresh calamari (283g / 10oz)
  • 0.5 tsp. Salt
  • 0.49 tsp. Pepper
  • 1 tbsp. Olive oil
  • 4 medium Fresh kumquats (19g/ 0.67oz each)
  • 1 tbsp. Garlic, finely chopped
  • 0.5 tbsp. Chili sauce
  • 2 tbsp. Fish sauce
  • 1 tbsp. Brown sugar
  • 1 bunch Fresh cilantro

Slice the calamari into 1/4 inch rings. Season with salt and pepper. Drizzle in some olive oil. Mix well.

Cut some kumquats and red chilies into slices.

Stir-frying calamari: Heat up a hot pan with some olive oil. Add the squid in and stir frequently for about 10-15 seconds. Take out and put in a bowl. In the same pan, add crushed garlic, some fish sauce, chili sauce, and sugar to make a nice sauce. Toss the calamari back in the pan and stir fry for another 10 seconds.

Plating: Simple plate up the calamari on a plate. Squeeze some fresh kumquat juice on and garnish with cilantro.
