Flavorful, satisfying Monkey Head Mushroom Stir-Fry with red and green chili pepper. Also known as lion’s mane mushroom, this unique-shaped mushroom has a remarkably meaty texture and often serve as a meat-substitute in Chinese vegetarian cuisine.

Ingredients:
  • 3 oz. Dried Monkey-head mushroom
  • Seasoning
  • 1 tsp. Salt, to taste
  • 1 tsp. Black Pepper
  • 1 count Egg yolk
  • 5 cup Corn Starch
  • 8 oz. Chicken breast
  • Marinade
  • 1 tsp. Salt, to taste
  • 1 tbsp. Cooking wine
  • 1 count Egg white
  • 1 tbsp. Cornstarch
  • 0.5 cup Red chili pepper
  • 0.5 cup Green chili pepper
  • 2 tbsp. Cooking Oil
  • 1 tbsp. Minced garlic
  • 1 tbsp. Cooking Wine
  • 0.5 tbsp. Soy sauce
  • 0.5 tbsp. Oyster sauce
  • 0.5 tsp. Sugar
  • 1 tbsp. Black vinegar, to taste
  • 1 tsp. Ground black pepper, to taste
  • 1 tsp. Ground pepper, to taste
  • 2 stalk Green onion, cut into 1-inch pieces
  • 1 tbsp. Cooking Wine
  • 1 cup Basil leaves, a few leaves
  • 1 tsp. Sesame oil
  • 0.5 tbsp. Peppercorn powder

Soak Monkey-head mushroom for 2 hours.

Squeeze out water, and pull apart the mushroom into bite-sized pieces.

In a bowl, mix mushroom and seasoning together, then shape mushroom into balls.

Coat with corn starch. Place on a plate.

Cut chicken breast into slices.

Combine and coat with seasonings for marinade chicken breast.

Cut red and green pepper into circles.

Deep fry mushroom at 120-150 °C/250-300 °F until golden.

In a wok over high heat, add about 2 tbsp cooking oil, and stir fry chicken breast pieces until done.

Add garlic, soy sauce, oyster sauce, sugar, black vinegar, sesame oil, peppercorn powder, red and green peppers, green onion, cooking wine, and mushroom.

Stir fry to mix for about a minute, then add basil leaves and ground black pepper. Mix well and serve hot.
