This rich, flavorful stir-fry recipe is easy and fun to make at home with its unique cooking methods. The colors of the golden potatoes and variety of chilis add vibrant colors to the dish so that you can have a feast for your eyes and your taste buds.

Ingredients:
  • 1 lb. Potatoes
  • 2 tsp. Cooking Oil
  • 3 oz. Chicken Thigh
  • 0.25 cup Garlic, Sliced
  • Half Onion, julienned
  • 3 Thai Green Chili, diced
  • 0.5 cup Dried Red Chili Pepper
  • 0.5 tbsp. Shaoxing Cooking Wine
  • 1 can Cola
  • 0.25 tsp. Black Pepper
  • 0.25 cup Slurry( 2 Tbsp of Cornstarch and 4 Tbsp of Water. )
  • 2 stalks Green Onion
  • 2 sprigs Basil

In a saucepan of boiling water, add 1 lb of potatoes for 10 to 15 mins. (Keypoint of this dish: You need to cook potatoes thoroughly. This way, you can easily smash it and make it taste good.)

When the potatoes are finished boiling and are soft, smash them with a spatula so that they are flat.

Add 2tbsp cooking oil into a pan and then add the smashed potatoes. Fry with medium fire until both sides turn a golden color. Take out and set side for later use

Add 3oz chicken thigh into the pan, stir fry for a little while. Then add garlic, sliced onion, green chilis, and dried red chili pepper.

Stir fry well and then add cooking wine and coke to the pan. Simmer for 3 mins. (Since coke already has sugar so do not need to add extra sugar)

Add the cooked smashed potatoes, black pepper and corn starch. (In the end, it is better to cook until all the soup is soaked by the potatoes.)

Cook on a high heat. Add chopped green onion and basil.

Quickly stir fry them together and then serve.

Remember to stir fry the smashed potatoes over a medium fire. Do not overcook it. It should be ready when it turns a golden color.
