With crisp green beans and plump shrimps flavored with savory sauce, this Shrimp and Green Bean Stir-Fry is easy to make and ready on the table in 30 minutes or less.

Ingredients:
  • 1 lb. Mexican Prawns, Head and Tail on
  • 7 oz. Green Beans
  • 0.1 tbsp. Cooking Oil
  • 0.1 tbsp. Green Onion
  • 10 pieces Ginger Slices
  • 1 tbsp. Minced Garlic
  • 1 oz. Julienned Onion
  • 1 oz. Red and Green Bell Pepper, Cut in Circles
  • Seasoning
  • 1 tbsp. Soy Sauce
  • 1 tsp. Sugar
  • 1 tsp. Balsamic Vinegar
  • 0.25 cup Water
  • 1 tsp. White Pepper
  • 2 tbsp. Slurry (a Mixture of Cornstarch and Water in 1:2 Ratio)
  • 1 tbsp. Sesame Oil

Prepare shrimps: peel off the shell. Do not remove the tail.

Make a shallow slit down the middle of the shrimp back and devein the shrimps.

In a cooking pan over high heat, bring enough cooking oil to 250°F-300°F (120°C-150°C), and deep fry green beans until fully cooked. Remove from oil and drain.(Note: must make sure the green beans are fully cooked, otherwise, not fully cooked green beans are toxic.)

In a cooking pot over high heat, bring enough water to a boil. Quickly pass the shrimps and deep-fried green beans through the boiling water. Set aside.

In a cooking pan over high heat, add cooking oil, chopped green onions, ginger slices, minced garlic, and julienned onions. Stir fry several times. In the same pan, add green beans, shrimps, soy sauce, sugar, balsamic vinegar, water, white pepper, and red and green bell pepper. Stir to mix well.

Finally, add slurry to thicken the sauce until desired consistency.
