A tasty eggplant topped with flavored ground meat with garlic and red chili, this is a delicious Stuffed Eggplant dish for eggplant lovers!  You can use chicken, beef, or pork for the ground meat.

Ingredients:
  • 1 Eggplant
  • 1 tbsp. Olive oil [For saute]
  • 4 clove Garlic
  • 0.3 cup Scallion
  • 1 tbsp. Chili, chopped
  • 1 tbsp. Tomato paste
  • 1.5 tbsp. Ketchup
  • 1 cup Chicken broth
  • 1 lb. Ground meat
  • 1 pinch Salt
  • 1 pinch Pepper

Spread olive oil onto a large halved eggplant. Transfer to the oven, bake at 400°F (200°C) for 20 minutes.

In a skillet on medium-high heat, add chopped scallion, minced garlic, minced chili, tomato paste, ketchup, and chicken broth. Pan-fry for a while.

Add ground meat. Seasoning with salt and pepper. Cook well.

Pour the meat sauce on the baked eggplant, transfer to the oven, bake at 400°F (200°C) for 15 minutes.
