Sweet Banana Spring Rolls

Fried Banana Spring Rolls - Bananas rolled in spring roll pastry and deep fried. Crunchy and sweet, they are very simple to make.

  • 4 medium Bananas, peeled
  • 1 oz Oreo cookies, crushed
  • 0.25 cup Egg wash
  • 8 oz Japanese mayonnaise
  • 0.5 tsp Lemon juice (to taste)
  • 8 piece Egg roll wrappers
  • 1 tsp Ground cinnamon

In a mixing bowl, combine 8oz/225g mayonnaise, 1tsp/3g ground cinnamon, 1oz/ 30g crushed OREO cookies, and a teaspoon of lemon juice. Mix well.

Place egg roll wrapper on a flat surface, put a tablespoon of OREO cookie mix at the center, take a half banana and place on top of the mixture.

Fold the wrapper corner on top of the banana, brush egg liquid on the other edges, fold the two side corners, then continue roll the banana until it sealed well.

In a cooking pan over high heat, bring enough cooking oil to 250°F/120°C, fry the banana roll until golden.

What is different about Japanese mayo? Using egg yolks and apple or rice vinegar and eliminating water gives Japanese mayonnaise a thicker texture than American mayonnaise and it is a rich and slightly sweet condiment.
