Chef John shares tips on making Sweet Corn Fritters, and it’s a fabulous way to enjoy the sweetness at the heart of fresh, in-season corn.

Ingredients:
  • 3 oz. Canned Corn
  • 0.1 tsp. Salt (A Little)
  • 1 cup Potato Starch
  • 1 tbsp. Sugar, salt and pepper, mayonnaise, or condensed milk etc..

In a large mixing bowl, put canned corn, a little salt, and potato starch. Combine until well blended so that corn kernels stained with starch.

Burn a half pan of oil to 400°F (200°C) and dump out for later use. Gently spread the corn in the pan with a lower flame for 3 to 5 minutes, and let the corn kernels stick together into a whole piece.

Pour the heated oil onto the corn cake. The amount of oil should be enough to submerge the corn. Turn to a medium flame, fry the corn for 3 minutes until the corn cake is golden and crisp.

Put the fried corn cake on a piece of kitchen towel to remove the excess oil.

Cut the corn cake. According to your own taste, you may enjoy the corn cake with powder sugar, salt and pepper, or condensed milk etc..

Reminder 1) The key to success is whether all the corn kernels can be glued together after being baked. So use enough starch. 2) The surface of the corn kernels should not be too dry. If it is too dry, it is not easy to stain the starch.
