Super healthy sweet potatoes make for a great gnocchi. A delicious homemade meal that will tick all the boxes, and making it is easier than you might think. The chestnuts and sage bring it all together. A brilliant dish to feed your loved ones.

Ingredients:
  • Sweet Potato Gnocchi
  • 3 medium Sweet potato
  • 1 large Egg
  • 1 cup Ricotta cheese
  • 1/2 tsp. Salt
  • 1/4 tsp. Ground black pepper
  • 3 cup All-purpose flour
  • Boil The Gnocchi
  • 1 tsp. Salt
  • Sage Sauce
  • 4 tbsp. Butter
  • 3 oz. Roasted chestnuts
  • 5 leaves Sage
  • 1/4 tsp. Salt
  • 1/4 tsp. Ground black pepper
  • Garnish
  • 2 tbsp. Grated Parmesan Cheese
  • 1 tbsp. Fresh sage

Preheat oven to 375°F/190°C. Rinse, then poke the sweet potatoes with a fork. Roast 1 hour.

Scoop out the sweet potato flesh into a food mill. Mash the sweet potatoes.

Mix with 1½ cup flour, ricotta, egg, salt and pepper. Add more flour if needed, should feel like Play-Doh. Too much flour and the gnocchi will be tough. Too little flour and the gnocchi will fall apart in the water.

Roll into 1-inch wide long strips.

Cut into 3/4-inch small squares.

In a large pot, boil in lightly salted water for 1-2 minutes or until gnocchi floats. Strain immediately but reserve 1 cup of the pasta water.

In a sauté pan, toast the chestnuts and butter until the butter starts to brown.

Add the sage, stir for 30 seconds, then add the gnocchi in the sauté pan.

Add 1-2 tbsp of pasta water at a time until sauce thickens. Season with salt and pepper if needed.

Garnish with fresh sage and parmesan.
