With fish sauce, crushed garlic and a touch of brown sugar, this zesty prawn dish features a mouthwatering tamarind sauce made from a sour, dark, sticky fruit that grows in a pod on a tamarind tree.

Ingredients:
  • 12 Large Tiger prawns (35.2oz/1kg)
  • 1 tbsp. Garlic, minced
  • 1 tbsp. Shallot, minced
  • 0.5 tsp. Black pepper
  • 0.5 tsp. Sea salt
  • 1 tsp. Brown sugar
  • 1.5 tbsp. Fish sauce
  • 0.5 cup Tamarind sauce
  • 6 Spring onions (white part only)
  • 2 Chilis, cut in 4 long strips

Preparing prawns: Peel off the prawn heads, devein and butterfly the prawns

Marinating prawns: In a bowl, add minced garlic, shallot, season with black pepper, sea salt, and brown sugar. Add olive oil and fish sauce into the bowl. Mix well. Add the prawns in the bowl and mix together with the spices and let it sit for 15 minutes in the fridge.

Stir-frying prawns: On medium heat, have a hot pan ready with some olive oil. Add in the prawns and stir-fry for about 3 minutes on both sides until the prawns are golden brown and nicely caramelized. Take out and set aside.

Making the sauce: In the same pan, add the leftover mixed spices. Cut up some white part of green onions and red chili and add them to the pan as well. Stir well until fragrant. Then add tamarind sauce and mix again until the sauce is well combined.

Saute-ing the prawns: Add the prawns back to the pan and saute for another minute.

Plating: Pour the prawns in a deep plate and garnish with some cilantro. Served with steamed rice or noodles.
