Great for parties or holidays, a smoked whole duck is actually not that hard to make. Chinese like to smoke meat with tea leaves along with other aromatic spices such as cinnamon and star anise, it doesn’t take long but can give duck that beautiful color and flavor.

Ingredients:
  • 1 count Whole Clean Duck   
  • 1 tbsp. White Wine [Marinade]
  • 0.5 cup Rice Wine [Marinade]   
  • 3 oz. Coarse Salt [Marinade]
  • 2 tbsp. Peppercorn [Marinade]
  • 5 counts Star Anises [Marinade]
  • 3 stalks Green Onion [Marinade]
  • 6 pieces Ginger Slices [Marinade]
  • 4 oz. Sugar Cane Leaves    
  • 7 oz. Tea Leaves   
  • 2 tbsp. Peppercorn 
  • 2 tbsp. Star Anise        
  • 4 sticks Cinnamon 
  • 7 oz.  Brown Sugar

Rub the duck with white wine, rice wine, coarse salt, peppercorns, star anise, green onion, and ginger slices. Stuff a couple of pieces green onion and ginger inside the duck.

Marinate for 6 hours.

Steam the duck in a steaming basket for 40 minutes. Remove and cool.

In a pot over high heat, add sugar cane leaves, tea leaves, and brown sugar, peppercorn, star anise, and cinnamon stick pieces. Stir fry to combine until smoky.

Place a wire rack in the pot, put the duck on top, cover with a lid, and smoke for 20 minutes. Remove the dock from the pot.

In a cooking pot over high heat, bring enough cooking oil to 350-400°F (180-200°C), and deep fry the smoked duck until golden. Remove from oil and drain.
