  • 1 Whole Chicken
  • 2 tsp. Salt [Marinade]
  • 2 tsp. peppercorn [Marinade]
  • 3 pieces Sliced ginger [Marinade]
  • 2 stalks Green onion [Marinade]
  • 3 stalks Green onion [Steam]
  • 5 pieces Sliced ginger [Steam]
  • 1 tbsp. Soy sauce (light) [Seasoning]
  • 1 tbsp. Soy sauce (Dark) [Seasoning]
  • 1 tbsp. Oyster sauce [Seasoning]
  • 1 tbsp. Honey [Seasoning]
  • 5 oz. Sugar cane leaves
  • 5 oz. Tea
  • 1 oz. Brown rice
  • 3 oz. Brown sugar

Marinade the chicken. Rub salt and Sichuan peppercorn over the chicken. Place ginger and green onion in the chicken cavity. Marinade for 4 hours.

After marinating, clean the chicken and soak off the excess water. Steam for 30 minutes.

Mix seasoning: mix all the seasoning in a bowl.

Brush the seasoning all over the steamed chicken.

In a pot, mix sugar cane leaves, brown rice, tea leaves, and brown sugar. Saute till smoky.

Place the smoky mix in a smoky rack and place the chicken on the rack for 15 minutes. Then, it’s ready to eat.
