Vegetarian dishes aren’t just pasta and salad. Use your wok to smoke the zucchini with green tea flavor and the result is simply delicious!

Ingredients:
  • 2 stalks Zucchini Squash
  • 1 oz. Sugar Cane Leaves, Cut into Small Pieces
  • 1 oz. Green Tea Leaves
  • 2 oz. Brown Rice
  • 1 oz. Rock Sugar
  • 8 pieces Star Anise       
  • 0.5 tbsp. Cooking Oil
  • Seasoning
  • 0.25 tsp. Salt  
  • 0.25 tsp. Black Pepper

Place zucchini on a cutting board. Start from one end of the zucchini and vertical to cut it. Cut in about ⅘ of the way deep at about ¼ inch apart to the other end.

Turn over the zucchini and turn knife about 45 degrees counterclockwise and cut the same manner. Make sure not to cut through all the way or you will end up with pieces of zucchini rather than one long slinky zucchini.

Put a skewer through from end to end.

In a wok, add sugar plant leaves, tea leaves, brown rice, rock sugar, and a few star anises. Stir to mix well.

Turn on the heat, place a rack in the wok, brush with oil, put zucchini skewer on the rack, and brush some oil over the zucchini.

Cover with the lid and smoke for 5 minutes. Remove zucchini from the wok.

Sprinkle with salt and pepper. Serve immediately.
