Sweet and savory cabbage pancakes, known as Okonomiyaki, is packed full of vegetables and Chef John uses tappan griddle to cook it. It’s a great way to entertain with the family and friends over the weekend.

Ingredients:
  • 10 oz. Chicken leg quarters, boneless and skinless
  • 0.5 oz. Purple cabbage, finely diced
  • 3 oz. Cabbage, chopped
  • 4 counts Egg
  • 2 tbsp. Milk
  • 1 oz. Onion, diced
  • 0.5 oz. Green onion, minced
  • 1 tsp. Salt
  • 1 tbsp. Flour
  • 2 tbsp. Cooking Oil
  • 0.5 tsp. Black Pepper
  • 2 tbsp. Takara Mirin
  • 1 tbsp. Soy sauce
  • 0.5 tsp. Salt
  • 1 tbsp. Honey
  • 3 pcs Sliced Bacon
  • 1 tps Sesame

Dice purple cabbage and chop green cabbage. Then put it in a mixing bowl.

Add milk, diced onion, minced green onion, salt, flour, and four eggs into the mixing bowl. Mix well.

On a heated Teppan, add a tablespoon of cooking oil, sear both sides of the chicken leg until golden, and sprinkle with black pepper on both sides. Cut the meat into chunky strips, pour the mirin on the meat, and cover with a lid.

On the other side of the Teppan, add cooking oil, the cabbage mixture, and shape into a circle (cabbage pancake). Remove the lid on the chicken and cover the cabbage mixture with it.

Add soy sauce, salt, and honey into the chicken. Toss to mix, cover with the lid to cook for a few minutes.

Place the 3 slices of bacon on top of the cabbage and turn it over. Then cover with the lid.

Sprinkle some sesame seed on the chicken.

Remove the lid and flip the cabbage pancake over.

Place the cabbage pancake in a serving plate and top with the chicken slices.
