Thai Chicken Pineapple Fried Rice - A quick and easy weeknight meal that's so flavorful! To balance the savory flavor, adding fresh diced pineapple gives it a touch of sweetness.

Set burner at high, in a non-stick pan, add 2Tbsp olive oil, cook chicken both sides till meat is done. sprinkle salt and black pepper on both sides while cooking.

Cut cooked chicken into small cubes.

Set burner at high, in a medium frying pan, add garlic butter, onion and stirring well, then add chicken cubes, curry powder, ketchup, mixed veggies, mix well and cook for a few minutes. Add coconut milk and dried coconut granules, mixing well, then add ½ tsp salt and a pinch of black pepper, stir and mix. Add cooked rice in a frying pan, mix well with everything.

Put fried rice mixture into pineapple shell. And top with diced fresh pineapple and cheese. Bake at 200°C / 400 °F for 10 minute.
