Truffle N’ Eggs – Uovo Al Tegamino E Tartufo

Cooking with truffles is most appreciated when you pair it with a simple recipe of eggs on croute. shaving the truffle thin will infuse the wonderful flavor and aroma into the raw egg yolk. The warm fluffy egg white base will soften the truffle just enough.

  • 1 large Egg white
  • For The Egg White
  • 1 tbsp Butter
  • 1 medium Shallot
  • tsp Salt
  • tsp Ground black pepper
  • For The Bread
  • 1 slice Whole wheat bread
  • 1 tbsp Butter
  • For The Egg Yolk
  • 1 large Egg yolk
  • tsp Salt
  • tsp Ground black pepper
  • Garnish
  • Thyme
  • 1 tbsp Black winter truffle

Cut the rye bread with the help of the metal ring.

Break the egg into a bowl, separate the yolk from the white.

Whip the egg white for a while.

In a saucepan melt some butter.

Add 1 tbsp of previously chopped shallot.

Cooking everything inside the metal ring, season with salt and pepper.

When the shallot is already golden, pour the white inside the metal ring, over the golden shallot and cook over low heat for 6-7 minutes.

When the White is cooked, toast the bread with the butter until it turns golden.

Build the plate as a tower, in the bottom sit the rye bread, with egg on top and then gently lay the egg yolk on top of the white egg and a little salt and black pepper on top of the yolk.

Garnish with thyme and truffle.
