A rich luscious well-balanced stew that has simmered down gently. With the depth of a meat chili but it’s not! Packed with winter squash instead. A slice of homemade rustic cornbread just adds another texture and a place to soak up all those wholesome nutrient-dense vegetables. Just to mention it’s a gluten-free dish too. Note: it is said that the nutrient-dense pumpkin components are beneficial and can lower blood sugar levels cholesterol and is rich in fiber amongst other things.

Ingredients:
  • For Roasting
  • 2 cup Diced skin on winter squash (buttercup, kabocha, delicata)
  • 1 tbsp. Olive oil
  • 2 tsp. Salt
  • 1 tsp. Black pepper
  • Stir-fry Vegetables
  • 1 tbsp. Olive oil
  • 1 cup Yellow onion, small dice
  • 1/2 tsp. Salt
  • 1 tsp. Black pepper
  • 1/2 cup Bell pepper, small dice
  • 1/2 cup Carrot, small dice
  • 1 ea. Jalapeno, small dice
  • 3 cloves Garlic cloves, minced
  • Spices
  • 1 tsp. Cumin
  • 23 tbsp. Chili powder
  • 14.5 ounces Fire-roasted tomatoes
  • 2 tsp. Soy sauce
  • 1/2 tsp. Salt
  • 1/2 tsp. Black pepper
  • 3 cup Reduced sodium stock of choice
  • 3 cup Peeled winter squash (acorn, butternut, Etc), diced (or sub canned puree)
  • 14oz can Canned beans (pinto, kidney, etc)
  • Cornbread
  • Wet Ingredients
  • 1 1/2 cup Buttermilk
  • 1 large egg
  • 1/4 cup Melted unsalted butter
  • Dry Ingredients
  • little Spray oil
  • 2 cup Medium coarse cornmeal
  • 1/2 tsp. Baking powder
  • 1/2 tsp. Baking soda
  • 1 tbsp. Sugar
  • Garnish
  • 2 tbsp. Melted butter
  • 1/4 tbsp. Coarse salt

Preheat oven to 450°F/232°C.

If roasting additional squash, season with olive oil/salt/pepper and roast until lightly tender. Reserve.

In a large soup pot, heat cooking oil over medium heat. Cook onions, salt, and pepper for 5 minutes.

Add bell pepper, carrots and cook for another 2-3 minutes.

Add jalapenos and garlic and 【Spices】, cook for 30 seconds. Add soy sauce, tomatoes, broth, and peeled winter squash. Cook 15 minutes.

Add beans and roasted squash, cook 5-10 minutes more until squash is soft.

Mix all dry ingredients in a medium bowl. Combine all wet ingredients in a small bowl. Add wet to dry and stir just to combine.

Preheat cast iron in a 450°F/232°C oven.

Remove the skillet from the oven and place on high heat. Add 1 T neutral oil or lard to pan to coat. Pour batter and rotate to distribute evenly.

Bake in oven for 15 minutes and a toothpick inserted in the middle comes out clean.

Garnish with salt and butter, enjoy!
