Preheat oven to 450°F/232°C.
A rich luscious well-balanced stew that has simmered down gently. With the depth of a meat chili but it’s not! Packed with winter squash instead. A slice of homemade rustic cornbread just adds another texture and a place to soak up all those wholesome nutrient-dense vegetables. Just to mention it’s a gluten-free dish too. Note: it is said that the nutrient-dense pumpkin components are beneficial and can lower blood sugar levels cholesterol and is rich in fiber amongst other things.
