Light and fluffy, these Zucchini Pancakes are super easy to make, low calorie, and the perfect way to sneak in some veggies! These are a tasty change of pace from ordinary potato pancakes.

Ingredients:
  • 3 Zucchini
  • 0.5 cup Parsley
  • 0.5 cup Dill
  • 1 cup Cheese
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • 2 large Egg
  • 2 tbsp. Paprika
  • 1 cup Flour
  • 2 tbsp. Olive Oil

Grate the zucchini. Mix it with parsley,dill, cheese. Season with salt and pepper.

In a mixing bowl, add eggs, paprika, and flour. Mix well.

In a heated skillet over medium heat, add olive oil and scoop the mixture onto the skillet. Flatten the batter with a spatula, and cook until the underside is nicely golden brown, about 2 minutes. Flip and cook on the other side, about 1-2 minutes longer.
